Job Description
- Oversee all dishwashing operations and ensure efficient management of the stewarding department
- Maintain the highest standards of cleanliness and sanitation throughout the kitchen and stewarding areas in compliance with health and safety regulations
- Manage and maintain all kitchen equipment, including dishwashing machines, and arrange timely repairs and servicing
- Implement and monitor food safety and hygiene protocols to ensure compliance with international standards and company policies
- Supervise stewarding staff and provide training on proper cleaning techniques, safety procedures, and operational best practices
- Manage inventory of cleaning supplies, chemicals, and equipment, and coordinate with procurement for timely replenishment
- Ensure proper segregation, storage, and disposal of waste materials in accordance with environmental guidelines
- Conduct regular quality assurance checks to verify cleanliness standards across all kitchen areas
- Coordinate with the kitchen brigade to ensure seamless operations and address any stewarding-related concerns
- Maintain detailed records of equipment maintenance, chemical usage, and staff performance
- Identify opportunities for process improvements and cost optimisation within the stewarding department
- Ensure compliance with all company policies, health and safety legislation, and local regulations
Qualifications
**Required Qualifications:**
- Minimum 3-5 years of experience in kitchen stewarding, dishwashing operations, or hospitality housekeeping roles
- Proven experience managing stewarding teams and staff supervision
- Strong knowledge of food safety, hygiene protocols, and HACCP principles
- Demonstrated understanding of health and safety legislation and compliance requirements
- Proficiency in inventory management and procurement coordination
- Experience with commercial dishwashing equipment and kitchen machinery maintenance
- Excellent organisational and time management skills
